WEEKNIGHT DINNER - SLOPPY JOE BLTs

Hello! Hello!
I always seems to find myself in deep thought around 3pm everyday.  What you may ask am I thinking about?  It's always the same.  "OOPS.  I didn't get anything out for dinner.  What am I going to make?  Do I have anything in the house?  Oh maaaannnn.  I am going to have to run to the store.  UGH.  I hate the local grocery store."

This is my inner monologue.  I really want to be one of those people that have the whole meal plan thing going.  Recipes, organized shopping lists.  You know the drill.  Has it happened yet?  Nope!  Who knows if it ever will. 

In the spirit of procrastination, I thought I would share a simple dinner recipe we use quite often.  It's pretty healthy and a hit with the fam. 

I'm pretty sure I found the recipe in a Taste of Home mag, but I can't seem to find it to tell you the issue.  It is for Sloppy Joe BLTs.  Here's the yummy goodness of it.
And here's how you make it!

Sloppy Joe BLT

1 large head of lettuce, torn into small pieces (roughly 4 cups)
1 small package of cherry tomatoes, cut each in half
1 small bag Real Bacon Crumbles (You could cook a bunch of bacon and chop it up too.  This is just a time saver)
1 cup shredded cheese of your choice
4 1/2 teaspoons cider vinegar
1/2 cup mayonnaise
4-6 Pita shells

Combine these together lettuce, tomatoes, bacon and cheese together in large bowl.  Mix mayo and vinegar together in a separate bowl, then add to lettuce mixture.  Split pitas in half and fill 'em up.  Enjoy! 
The best part about these is that there is NO COOKING involved!  Super simple and a time saver; the best combination for a night when I didn't think of anything else.  you could also put these on toasted bread, it just makes it a bit more likely to spill out. 

MMMM... just looking at it makes me hungry!
